This is a dish a friend made for me one day recently. I thought it was so delicious that I thought I’d pass it along to you.

Nowadays with so many people experiencing allergies, many are looking for variations to replace the wheat they usually eat with other ingredients.

Couscous was traditionally made with semolina, or durham wheat. I used Quinoa (keen-wah) because it’s light, neutral tasting, filling and non-allergenic.

This is a hearty recipe that not only replaces the wheat, but makes a whole meal in itself if you should so please. You can replace any and all of the other ingredients according to your taste.
